It's a party-sized premix that's bursting with essence associated with holiday season, making it ideal for your festive gathering. Save the extra syrup you can use for breakfast cocktails, puddings, or for another batch of the drink.

The Bikini Cocktail

Makes enough for 10 servings

To make the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Premix (yields 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Method

Making the Cordial: Place every items inside a pan, heat until it reaches a gentle boil, mixing to dissolve. Then, remove from the stove allowing it to cool entirely. Pour into a sterilised bottle, cap it and store in the refrigerator, it can be stored for up to one month.

To make Cocktail Base: Pour all the liquids in a big jug, allow it to infuse for one hour, then strain preferably using a fine cloth, so it's completely strained.

To serve: Add 85ml of the premix into a cocktail shaker containing ice, and agitate gently for a minute to cool it down. Strain into a cold coupe glass or equivalent, decorate with some cranberries and complete it using a quick spritz of the essential oil over the drink.
